No Fuss Potato Soup

I've changed up this recipe a little by adding more potato (8-10 cups), more water (6 cups), less onion (1 cup), more celery (1 cup), more carrots (1 cup), less salt (1 tsp.) Enjoy! This is so good and can even be served with a sprinkling of shredded cheddar cheese.

Chicken Noodle Soup (with a kick)
2 lb. chicken breasts - bone in, skin on
1 T. kosher salt
1 t. paprika
1 t. crushed red pepper
1/2 t. ground thyme
1/2 t. garlic powder
1/2 t. fresh ground pepper
1 t. rosemary leaves
Place in slow cooker for 3 hours on high until juices run clear. Cool to handle and shred meat.
1 large onion, diced
3 cups vegetables, chopped
8 cups chicken stock/broth
8 oz. egg noodles or other pasta/rice
Place stock and veggies in slow cooker, cook on high until veggies are tender, add meat and noodles and cook until noodles are cooked to al dente. Very good when you have head congestion!

Easy Slow-Cooker Venison/Beef Stew
1 1/2 pound stew meat
8 oz. baby carrots
3-4 potatoes, cubed
1 can tomato soup (10.75)
1 can beef broth (10.75)
1 can French onion soup (10.75)
Place all ingredients in crock pot and cook on low for 10 hours. This was so good and very comforting. The venison was super tender.

Mexican Chili
1 pound ground venison/beef
2 can kidney beans
1 1/2 c. chopped celery
1 small can green chilis, drained and rinsed
1 bay leaf
1/2 t. garlic powder
1 c. chopped onion
1 28 oz. can diced tomatoes
1 6 oz. can tomato paste
1/2 c. chopped green pepper
2 T. sugar
1 t. dried marjoram
In large Dutch Oven cook ground meat and onion. Drain if necessary. Add in all the other ingredients, cover and simmer for 30 minutes until veggies are soft. Remove bay leaf. Serve with sour cream if desired.

Ham 'n Rice Soup
4 celery ribs, chopped
1 large onion, chopped
1/4 c. butter
Saute until soft.
4 medium carrots, diced
Add to saute and cook until slightly soft.
1/3 c. flour
1/2 t. pepper
Stir into veggies.
2 cups milk
Stir into veggies and cook until very slightly thickened.
Add in 4-6 cups cooked wild rice and brown rice - any combination, 3 cups cooked ham, 3 T. chicken bouillon (knorr seasoning) and 8 cups or more water. Simmer until veggies are soft. This is a favorite!!

Blueberry Coffee Cake
1/2 c. butter
1 c. sugar
3 eggs
2 c. all purpose flour
3 1/2 t. baking powder
1/2 t. salt
1/2 c. milk
1 t. vanilla
1 c. blueberries (or more if you have plenty)
1/4 c. sugar
1/2 t. cinnamon
Beat butter and 1 cup sugar until fluffy. Add eggs and dry ingredients alternately with milk and vanilla. Sprinkle berries over cake. Mix remaining sugar and cinnamon together and sprinkle over berries. Bake at 350 degrees for 40 minutes. Don't overbake or it will dry out. We like it with a little dollop of cream or even a splash of milk poured over the cake.
