Strawberry Dream Bars
crust
1.5 cups pecans OR any nut you prefer
3 dates
2 tbs coconut oil
filling
1.5 cups soaked cashews
2 cups strawberries
1/3 cup coconut cream or milk
1/2 cup maple syrup (or less if you like it less sweet)
1 tsp vanilla extract
a squeeze of lemon juice
top with fruit and freeze. serve chilled! store in the freezer (I prefer it frozen as it's still creamy out of the freezer!)
Almond Butter Bliss Balls
1 cup almond butter (creamy or crunchy whatever you prefer)
1.5 tbs cocoa
1/2 cup coconut flour
1/3 cup maple syrup
form into balls then roll in a little maple syrup and then roll in coconut shavings! store in the fridge & enjoy!
Berry Chia Freeze
1 cup coconut milk OR any milk I used cashew here
1/4 cup chia seeds
*1 tbs açaí powder (optional but it adds flavor!)
*squeeze of lemon juice (optional I like the bit of tartness!)
smoothie
1 banana
1-2 cups strawberries
a little bit of coconut milk (I prefer my smoothies thicker so less liquid = thicker smoothie)
top with lemon shavings and coconut shavings!
Coconutty Stuffed Dates
pitted dates
almond butter
coconut shavings
simply stuff the dates with your nut butter and sprinkle coconut shavings on top! these taste like straight-up candy! packed with nutrients and satisfying ~ you will love these!
Baked Berry Cobbler
2 tbs water
2 tbs lemon juice
4 tbs maple syrup
1 tsp vanilla extract
4 cups fresh berries
1 tbs tapioca flour
topping
4 tbs maple syrup
3 tbs coconut oil
1 cup almond flour (I made this recipe again and I recommend adding in 2 tbs tapioca flour to help the topping hold texture better!:)
bake for 35 mins at 350F ~ enjoy WARM :)
